Roasted pear and Jeanne bagel

INGREDIENTS
Roasted pear:
- 1 pear
- 1 tbsp olive oil
- 1 tbsp cider vinegar
- Salt, pepper

Crème au Jeanne:
- 1 clove of garlic
- 1 shallot
- 80 g vegetable cream
- 70 g plain soya yoghurt
- 60 g Jeanne
- Salt, pepper

Bagel:
- 2 bagel rolls
- 1 Jeanne
- Arugula
- A few red onion pickles
- 1 handful of nuts

RECIPE

  1. Wash and thinly slice the pears.
  2. 
Heat the olive oil in a pan. Lay the pear slices flat and roast over medium heat, about 3 minutes per side, until tender and golden. Deglaze with cider vinegar and season with salt and pepper. Place the pear slices on a plate and set aside.
  3. 
Prepare the Jeanne cream. Peel and chop the garlic clove and shallot. Place all the ingredients in a blender and blend to obtain a smooth cream.
  4. 
Assemble the bagels: cut the bread in half, brush the inside with Jeanne cream, then arrange the rocket, slices of roasted pear, slices of Jeanne, a few red onion pickles and crushed walnuts.
