Country potatoes and blue ranch dressing

INGREDIENTS
Country potatoes:
- 8 good firm organic potatoes
- 2 tbsp olive oil
- 1 tsp Provence herb
- 1 tsp smoked paprika
- Salt, pepper
Blue ranch dressing:
- 1 Jeanne
- 1 natural soya yoghurt
- 1 small clove of garlic
- 4 tablespoons of vegan mayonnaise
- 1 tablespoon of neutral oil
- 1 teaspoon of chopped parsley
- 1 teaspoon of chopped chives
- 1/4 teaspoon of salt
Optional to serve: 1/2 Jeanne crumbled for an even more gourmet result
RECIPE
Wash the potatoes well (keep the skin), dry them and cut them in half, then in 4.
Place them on a baking tray, drizzle with olive oil, add the herbs and paprika, season with pepper and mix with your hands. Bake in the oven at 180°C for 30-40 minutes, the potatoes should be golden brown and crispy on the outside. Place on a plate and salt very lightly.
In the bowl of a mini blender / personal blender, add the diced Jeanne, the yoghurt, the degermed garlic clove, the vegan mayonnaise, the spoon of oil and the salt. Blend well to obtain a smooth texture. Pour into a bowl, add the herbs and mix.
You can drizzle the potatoes with the blue ranch sauce or simply dip them in it.
