Mini Josephine puff pastries with pistachios and jam

INGREDIENTS
- 1 roll of puff pastry
- 1 Josephine
- 1 small jar of black cherry (or strawberry or red fruit) jam
- 1 handful of coarsely chopped pistachios

RECIPE
Preheat the oven to 180°C.

Unroll the puff pastry and cut out squares with a knife. Take a square and bring the tips to the centre. Press the points in the middle, taking care not to flatten the rest. Repeat for each square.

If the puff pastry is round, you can join the sides together in pairs, making sure that the arc (or diagonal) faces inwards. This will form a square. Place the pastry squares in muffin tins. Add a teaspoon of jam to the centre and sprinkle with crushed pistachios.

Bake at 180°C for 12 minutes. Remove from the oven and place on a serving plate.Sprinkle with a few crushed pistachios and enjoy!
