Joy Pizza, Tomato & Shredded Joy

INGREDIENTS
For the dough:
- 400 g wheat flour (T45 or T55)
- 225 ml lukewarm water
- 1 sachet dried baker's yeast (about 5g)
- 1 tsp salt
- 2 tbsp olive oil
Topping:
- 1 bag of grated Joy
- 5 tablespoons of tomato sauce
- Oregano (or herbes de Provence)
- Fresh basil
- Salt, pepper
Optional:
- Black olives
RECIPE
In a large salad bowl or the bowl of a food processor, pour in the flour and successively add the salt, then the yeast.
Dig a well and pour the water into the centre. Mix to obtain a homogeneous dough, then knead for 10 minutes by hand on the work surface or with a hook in the food processor. Add the olive oil and knead for another 5 minutes.
Leave the dough to rest for 1 hour, covering the bowl with a cloth at room temperature.
With a rolling pin, roll out the dough ball on the work surface to a disk of about 30 cm in diameter. Add the tomato sauce with a ladle, then sprinkle with oregano or herbes de Provence. Finish by sprinkling generously with grated vegetable.
Place the pizza in the oven at 220°C for 10 to 15 minutes, until the edges of the dough are lightly browned. Sprinkle with basil leaves just before serving.
