Vegetable lasagne with grated Joy

INGREDIENTS
- 150 g grated Joy
- 200 g button mushrooms
- 1 large courgette
- 200 g fresh spinach (2 good handfuls)
- 190 g peppers roasted in oil
- 500 ml tomato sauce
- 2 tsp. herbes de Provence
- 2 tbsp. olive oil (or the oil from the peppers)
- 5 tbsp. vegetable cream (in this case soya)
- Salt, pepper

RECIPE

  1. Preheat the oven to 200°C.
  2. Cut the mushrooms into strips and the courgette lengthwise into slices of about 3-4mm thick. You can use a mandolin to make it easier.
  3. In a bowl, mix the tomato sauce with the herbes de Provence, 3 turns of salt and pepper.
  4. In a gratin dish, start by coating the bottom with 2 tablespoons of tomato sauce. Then place the courgette slices, and alternate layers of tomato sauce - mushrooms - spinach - grilled peppers - grated Joy - courgette... Finish with a little tomato sauce, a few spoonfuls of oil, the grated Joy, and finally the liquid cream.
  5. Season with salt and pepper and bake for 20-25 minutes at 200°C, until the top is golden brown.
