Mini grilled cheese with grated Joy

INGREDIENTS
For the garlic butter:
- 100 g vegetable butter
- 5 g fresh parsley
- 1 spring onion
- 1 pinch of salt
- 1 clove of garlic

For the grilled cheese:
- 1 baguette or 1 loaf of bread of your choice
- 1 bag of grated Joy
- Dried tomatoes

RECIPE
Mix all the ingredients for the garlic butter in a food processor. It can be stored in the fridge for a fortnight.

Cut medium thick slices of bread and spread a thin layer of garlic butter on both sides of each slice. Thinly slice the sun-dried tomatoes.

Heat a frying pan over medium heat with a teaspoon of neutral oil, and when it is hot, place a few slices of bread (buttered side down), place a sun-dried tomato, a handful of grated Joy and cover with another slice of bread (buttered side up). Flatten the grilled cheese with the back of a spatula, then turn over and grill the other side.
Serve hot.
