
Hot Jil Salad

INGREDIENTS
Breaded Jil
-1 log of Jil
- 1 tbsp cornflour
- 2 tbsp water
- Breadcrumbs
- Cooking oil
Vinaigrette
-4 tbsp walnut oil
- 2 tbsp balsamic vinegar
- 1 tbsp mustard
- 2 tsp maple syrup
- 1 small shallot
- Salt, pepper
Garlic croutons
-6 slices of bread (fresh or stale)
- 1 clove of garlic
- Olive oil
Dressing
- Mixed salad
- 2 handfuls of nuts
RECIPE
- In a bowl, mix the water and cornstarch until the mixture is sticky but not too thick. Pour the breadcrumbs onto a separate plate.
- Cut the Jil log into slices. Dip the slices of Jil successively in the water-starch mixture, then in the breadcrumbs to coat them well. Repeat the operation for all the slices.
- Heat a little oil in a pan. Place the breaded Jil slices in the pan and fry for about 2-3 minutes on each side until golden brown. Remove from the pan and place the breaded slices on a plate covered with kitchen paper.
- Prepare the vinaigrette. Peel and finely chop the shallot and mix all ingredients in a bowl. Taste and adjust the seasoning if necessary.
- Prepare the garlic croutons. Brush the bread slices with olive oil and rub with the peeled garlic clove. Place the garlic rubbed bread slices in a pan with a little olive oil and fry for a few minutes on each side.
- Arrange the salad on plates and garnish with the still warm slices of breaded Jil, bread crumbs and nuts. Serve with the vinaigrette.
